Recipe: Spaghetti-less Marinara

Serves 4. Preparation time 20 mins.

Ingredients:

  • 1kg frozen marinara mix
  • 2 large onions
  • 2 cloves garlic (or 2 teaspoons minced garlic from a jar)
  • 1/4 chilli (or large pince of dried chilli flakes)
  • 3 x 400g cans crushed (not diced or chopped) tomatoes
  • Balsamic vinegar
  • Dried basil
  • Dried oregano
  • Dried sage
  • I large avocado

 

Method:

  1. Place frozen marinara mix in a colander in water to defrost.
  2. Peel and dice the onions and sauté in a pan. Add the garlic only when the onions are translucent as the garlic will cook more quickly.
  3. Add the crushed tomatoes, dried herbs and bring to a simmer.
  4. Add the (now defrosted) marinara mix and simmer gently for 10 minutes.
  5. Serve in a soup bowl with a splash of balsamic vinegar and topped with sliced avocado.

This is my ‘go to’ meal for when I’m cooking for myself. Even though this meal is very healthy, all the ingredients can be kept in the pantry or freezer – so they’re always on hand. It’s quick to make and tastes great. Although I’ve said it serves four, it lasts me two meals (I eat a lot). I’ll have it for dinner, then eat it cold for lunch the next day. It doesn’t keep well beyond this.
