Serves 12. Preparation 15 mins.
Ingredients:
- 6 bacon rashers
- 12 eggs
- Grape or sundried tomatoes chopped
- Spinach or basil leaves
- Onion, thinly sliced
Method:
- Cut each bacon rasher lengthways to give you 12 long strips.
- Line muffin cups of a 12 muffin tray with a strip of bacon.
- Fill each cup with leaves, onion and tomatoes.
- Whisk eggs and top up each muffin cup.
- Bake for 15mins

You can substitute any of the filling ingredients. Try chicken, rosemary and garlic; pumpkin, curry paste and garlic salt or prawn, tomato, onion and oregano.
