Serves 4. Preparation time 20 mins.
Ingredients:
CHICKEN
- 4 chicken breasts
- 1tsp paprika
- 1tsp black pepper
- 1tsp oregano
- 1tsp thyme
- 1/2tsp fennel
- 1 tsp crushed garlic (approx 2 cloves)
SALSA
- 1tbs lime
- 1tbs chopped mint
- 1 mango
- 1 red capsicum
- 1/2 red onion
- 1 avocado
Method:
- Preheat oven to 210 degrees
- Combine herbs
- Coat chicken in herbs
- Bake chicken for 25 minutes (use baking paper to avoid mess or oven bags to avoid drying out)
- Dice mango, capsicum and avocado into cubes, slice onion, combine all salsa ingredients
- Serve chicken on bed of spinach (or other greens) with salsa on the side
