Serves 4. Preparation 15 mins.
Ingredients:
- 1 tbs olive oil
- 4 rashers bacon diced
- 1 large sweet potato cut into 2cm cubes
- 1 brown onion diced
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp smokey paprika
- 2 x 400gm diced tin tomatoes
- 1 bunch coriander
- 4 large free range eggs
Method:
- Preheat oven to 180.
- Heat oil in fry pan, add onion, bacon, potato cook for 8 mins (until soft).
- Add cumin, coriander & paprika, cook 1 min.
- Pour tomatoes into pan and bring to the boil.
- Roughly chop 1/2 the fresh coriander and stir into mixture.
- Place 1/4 mixture into 4 ceramic/glass dishes with the back of a spoon make a well in the center, crack 1 egg into each dish, place foil over the dishes and place in oven for 10-15 mins. Remove foil for last 5 mins.
- Season with salt and pepper and fresh coriander.
