Recipe: Potjiekos

Serves 8. Preparation 20 minutes.

Ingredients:

  • 2 tbs olive oil
  • 1 large onion diced
  • 3-4 cloves garlic crushed
  • 1 bay leaf
  • 6-10 curry leaves
  • 1 tsp salt
  • 2 ltrs water
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 3 tsp mild indian curry powder
  • 1 tsp chilli paste (sambal oalk)
  • 1kg diced beef, (any steak)
  • 8-10 sausages chopped in half
  • 4 lamb chops cut in 1/2
  • 2 tins diced tomatoes
  • 2 large sweet potatoes in 5 cm cubes
  • Soy sauce
  • BBQ sauce

 

Method:

  • Traditionally made on an open fire in a potjie dish.
  • Heat olive oil in heavy based large fry pan.
  • Add garlic, onion, bay leaf & curry leaves, keep stirring.
  • Add all meat & sausages, brown continue stirring.
  • Add salt, curry powder, cumin, coriander stir this will stick.
  • Add tomatoes and 1/2 the water.
  • Stir and add soy & bbq sauce.
  • Allow to cook (boil) for at least 2-3 hours stir every now and then.
  • Add more water as required.
  • Add potatoes to last 20 mins of cooking.
