Recipe: Bacon and Egg Pot

Serves 4. Preparation 15 mins.

Ingredients:

  • 1 tbs olive oil
  • 4 rashers bacon diced
  • 1 large sweet potato cut into 2cm cubes
  • 1 brown onion diced
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp smokey paprika
  • 2 x 400gm diced tin tomatoes
  • 1 bunch coriander
  • 4 large free range eggs

 

Method:

  1. Preheat oven to 180.
  2. Heat oil in fry pan, add onion, bacon, potato cook for 8 mins (until soft).
  3. Add cumin, coriander & paprika, cook 1 min.
  4. Pour tomatoes into pan and bring to the boil.
  5. Roughly chop 1/2 the fresh coriander and stir into mixture.
  6. Place 1/4 mixture into 4 ceramic/glass dishes with the back of a spoon make a well in the center, crack 1 egg into each dish, place foil over the dishes and place in oven for 10-15 mins. Remove foil for last 5 mins.
  7. Season with salt and pepper and fresh coriander.
