Serves 4. Preparation 20 mins.
Ingredients:
- 1 iceberg lettuce
- 500g pork mince (or beef or chicken)
- 1 brown onion
- 3 cloves garlic
- 1tsp-1tb minced/chopped ginger
- 1 red capsicum
- 1 carrot
- 1 small zucchini
- 1 field mushroom
- 100g water chestnuts
- 1 chilli
- 2 tbs soy sauce
- If you use oil to cook, use sesame or peanut oil
Method:
- Wash, dry and peel leaves from lettuce.
- Finely slice/grate onion, mushroom, capsicum, water chestnuts, zucchini and carrot.
- Cook onion, garlic, ginger and chili in pan until onion is clear.
- Add mince and cook until brown.
- Add veges and soy sauce.
- When cooked, spoon into lettuce cups.
- Nom nom.
