Serves 8. Preparation 20 minutes.
Ingredients:
- 2 tbs olive oil
- 1 large onion diced
- 3-4 cloves garlic crushed
- 1 bay leaf
- 6-10 curry leaves
- 1 tsp salt
- 2 ltrs water
- 1 tsp ground cumin
- 1 tsp ground coriander
- 3 tsp mild indian curry powder
- 1 tsp chilli paste (sambal oalk)
- 1kg diced beef, (any steak)
- 8-10 sausages chopped in half
- 4 lamb chops cut in 1/2
- 2 tins diced tomatoes
- 2 large sweet potatoes in 5 cm cubes
- Soy sauce
- BBQ sauce
Method:
- Traditionally made on an open fire in a potjie dish.
- Heat olive oil in heavy based large fry pan.
- Add garlic, onion, bay leaf & curry leaves, keep stirring.
- Add all meat & sausages, brown continue stirring.
- Add salt, curry powder, cumin, coriander stir this will stick.
- Add tomatoes and 1/2 the water.
- Stir and add soy & bbq sauce.
- Allow to cook (boil) for at least 2-3 hours stir every now and then.
- Add more water as required.
- Add potatoes to last 20 mins of cooking.
