Recipe: Bacon Wrapped Quiches

Serves 12. Preparation 15 mins.

Ingredients:

  • 6 bacon rashers
  • 12 eggs
  • Grape or sundried tomatoes chopped
  • Spinach or basil leaves
  • Onion, thinly sliced

Method:

  1. Cut each bacon rasher lengthways to give you 12 long strips.
  2. Line muffin cups of a 12 muffin tray with a strip of bacon.
  3. Fill each cup with leaves, onion and tomatoes.
  4. Whisk eggs and top up each muffin cup.
  5. Bake for 15mins

Kez says:

You can substitute any of the filling ingredients. Try chicken, rosemary and garlic;  pumpkin, curry paste and garlic salt or prawn, tomato, onion and oregano.
