Recipe: Coconut and Date Balls

Serves 10. Preparation 10 minutes.

Ingredients:

  • 1 cup chopped pitted dried dates
  • 3/4 cup almond meal
  • 3/4 cup flaked coconut, (or dessicated if you haven’t got flaked)
  • 1/2 cup unsalted cashews
  • A pinch of sea salt
  • Extra shredded coconut to roll balls in.

 

Method:

  1. Place chopped dates in food processor and process until paste forms.
  2. Add almond meal, coconut, cashews and salt. Process until combined.
  3. If mix seems too dry you can add a small amount of water until mix comes together.
  4. Roll mixture into small balls, then roll in shredded coconut.
  5. Chill in fridge for 30 minutes.

This is a quick easy snack that you can make in advance and keep in the fridge, for them times you feel like something sweet, but still want to make the right choices. All natural ingredients and high in protein.
