Recipe: Cajun Chicken with Mango Salsa

Serves 4. Preparation time 20 mins.

Ingredients:

CHICKEN

  • 4 chicken breasts
  • 1tsp paprika
  • 1tsp black pepper
  • 1tsp oregano
  • 1tsp thyme
  • 1/2tsp fennel
  • 1 tsp crushed garlic (approx 2 cloves)

SALSA

  • 1tbs lime
  • 1tbs chopped mint
  • 1 mango
  • 1 red capsicum
  • 1/2 red onion
  • 1 avocado

Method:

  1. Preheat oven to 210 degrees
  2. Combine herbs
  3. Coat chicken in herbs
  4. Bake chicken for 25 minutes (use baking paper to avoid mess or oven bags to avoid drying out)
  5. Dice mango, capsicum and avocado into cubes, slice onion, combine all salsa ingredients
  6. Serve chicken on bed of spinach (or other greens) with salsa on the side
